So the Dijon Capitale editorial team decided to set the record straight and down a few bottles. [...] The setting was perfect: the Maison Louis Bouillot and its tastefully restored glass roof in Nuits-Saint-Georges, ideal for the most delicious tastings. All that was missing was a chef and a wine and food pairing specialist to set the mood. We found them in the kitchens of the Hostellerie Cèdre & Spa in Beaune: Michelin-starred Jordan Billan and his head sommelier Benjamin Maillet.
